Is mushroom coffee low acid? Not inherently, and not by default. Why Did "Low Acid" Become a Mushroom Coffee Selling Point?

Acid sensitivity is one of the most common reasons people say they cut back on coffee, so "low acid" reads as an obvious, reassuring claim to print on a bag. Mushroom coffee brands, many positioning against regular coffee's jitteriness and harshness, picked it up as shorthand alongside "smooth" and "gentle." The trouble: "low acid" has no agreed meaning on a coffee label, and until recently almost nobody was checking whether the phrase matched what was in the cup.

It isn't a certification a lab issues after testing a batch. It's a phrase a brand chooses to print, the same way "premium" or "artisan" gets chosen, on the strength of how it sounds rather than any measurement behind it. That gap between the phrase and the proof is exactly what the research below set out to close.

Is Mushroom Coffee Low Acid? What the 2024 Study Actually Found

Researchers at North Carolina A&T State University set out to check. Abdulhakim Sharaf Eddin, Philip Junior Yeboah, and Salam A. Ibrahim measured the pH of commercially packaged coffee products marketed as low acid and published the results in Bioactive Compounds in Health and Disease in 2024 (Sharaf Eddin et al., 2024). Measured pH ranged from 4.97 at the lowest to 5.72 at the highest, with most samples clustering between pH 5.0 and 5.29, ordinary brewed-coffee territory rather than a distinct "low acid" category.

The researchers concluded their findings support the need for an accurate labeling standard for packaged coffee, a polite, peer-reviewed way of saying the labels currently in front of shoppers aren't reliable. That study tested packaged coffee broadly, not mushroom coffee specifically, so it isn't a verdict on any individual mushroom coffee brand. What it establishes is the baseline: printing "low acid" on a coffee package has not required independent pH verification, so the claim alone tells a buyer very little.

Why Adding Mushrooms Doesn't Change the Coffee's Chemistry

Mushroom coffee starts as roasted coffee. Lion's mane or chaga is grown, extracted or dried into powder, and stirred into the ground coffee or the brewed cup afterward, layered on top of a base that was already roasted before the fungus was ever involved. A mushroom extract isn't an acid or a base in any meaningful concentration, so it doesn't neutralize anything already present in the coffee.

Whatever pH that coffee had before the mushroom powder was added is, chemically, close to what it has after. If a mushroom coffee brand wants to make a real "low acid" claim, the coffee itself needs to earn it, independent of anything fungal in the bag.

Roasting Doesn't Offer a Simple Fix Either

The other common shortcut is "we use a special roast, so ours is lower acid." A 2024 study in the journal Foods measured pH against roast degree directly and found the relationship isn't the straight line marketing copy implies (Kim et al., 2024). As roasting progressed, pH first dropped, meaning the coffee got more acidic, before rising again later in the process.

The researchers traced this to how chlorogenic acid, one of the main acids in green coffee, breaks down as it's heated: early in that breakdown, the resulting compounds are themselves acidic, and only later do those secondary compounds decompose enough for pH to climb back up. "Roasted longer" is not a dependable proxy for "less acidic." It depends on exactly where in that curve a given batch lands, which a bag's roast-level label doesn't tell you.

Does Cold Brew Solve the Acidity Problem?

Cold brew carries its own version of the same claim: steep coffee in cold water instead of hot, and the result is supposedly gentler on the stomach. A 2017 study in Scientific Reports tested that directly, measuring chlorogenic acid concentration and pH across cold and hot brew methods made from the same beans, and found the two were comparable (Fuller & Rao, 2017).

The researchers concluded that claims about cold brew tasting less acidic aren't explained by lower chlorogenic acid content, since the compounds most responsible for perceived acidity are highly soluble and extract quickly regardless of water temperature. Brew temperature changes plenty about a cup of coffee. Acid content, on the measured evidence, isn't reliably one of them.
