Is Mushroom Coffee Acidic? What the pH Numbers Actually Show
Is mushroom coffee acidic? Yes. Brewed coffee sits around pH 4.85 to 5.13, and a blend that is ninety percent coffee lands in that same band. Replacing a tenth of the grounds with mushroom powder shifts brew pH by roughly 0.02 to 0.05 units, far too little to taste or to call low acid.

Is Mushroom Coffee Acidic? Three Questions Hide Inside One
Most of the confusion here comes from a single word doing three jobs. The question "is mushroom coffee acidic" is really three separate questions, and they do not share an answer.

These three do not move together. The clearest demonstration is a 2018 study in Scientific Reports that measured both pH and titratable acidity in cold brew and hot brew coffees, using light roast beans from six origins. The pH values were comparable across both methods, spanning 4.85 to 5.13, while the hot brews carried measurably more total titratable acid.
Same beans. Nearly identical pH. Different acid content. Different taste. That is the whole problem with the word in one experiment, and it is why "less acidic" on a label tells you almost nothing without saying which of the three it means.

What Brewed Coffee's pH Actually Is
Coffee is mildly acidic and always has been. The range above, 4.85 to 5.13, puts a normal cup between tomato juice and black tea on the pH scale. It is nowhere near the acidity of a soft drink or citrus.
The acids doing the work are mostly chlorogenic, quinic, citric, malic, acetic and formic. Roasting degrades some of them and creates others, which is why roast degree moves the number. A 2020 study in Foods that brewed the same Colombian arabica at light, medium and dark levels found that darker roasts produced lower concentrations of these compounds in both hot and cold preparations.
That published spread of 0.28 pH units, from 4.85 to 5.13, is worth holding onto, and it is worth being precise about where it came from. The 2018 study held roast constant at light and still recorded that range across six origins and two brew methods. In pH terms it represents a genuine 1.9-fold difference in free hydrogen ion concentration, because the scale is logarithmic.
In other words, origin and brew method alone can nearly double the acidity of your cup before anyone touches the roast. Roast is a further lever on top of that range, not part of it.

The Arithmetic This Category Skips
Here is the calculation that decides the question, and it takes one line.
A typical mushroom coffee is around 90 percent coffee and 10 percent mushroom material by dry weight. Ours is 90 percent medium roast arabica, 5 percent lion's mane, 5 percent chaga. Brew a standard dose of about 10 grams and you are putting 9 grams of coffee into the filter instead of 10, alongside a gram of mushroom powder that is largely insoluble polysaccharide and fiber.
So the real question is not what mushrooms do. It is what removing 10 percent of the coffee does to pH.

There are two honest ways to bound it:
- If you treat coffee's acids as fully dissociated, hydrogen ion concentration falls in direct proportion to the dose. Cutting it to 90 percent raises pH by log(1/0.9), which is 0.046 units.
- Coffee acids are weak acids, so concentration follows a square-root relationship instead. That gives half the shift: 0.023 units.
Real coffee is also a buffered system. It contains those acids alongside their conjugate bases and a meaningful load of potassium and phosphate salts. Dilute a buffer and the ratio of acid to base barely changes, which pushes the true answer toward the bottom of that range rather than the top.
So the mushroom swap buys you somewhere between 0.02 and 0.05 pH units. Set against the 0.28 units that origin and brew method command at a single roast level, the choice of bean and brewing method is six to twelve times more powerful than the decision to add mushrooms.
To put 0.05 units in plain terms: it is a 12 percent change in hydrogen ion concentration. A laboratory pH meter resolves that easily. A human palate does not come close.
One caveat we will state plainly, because the category usually does not. This is arithmetic derived from published pH ranges, not a measurement of our own cup. Then Why Does It Taste Smoother?
Plenty of people genuinely find mushroom coffee gentler, and they are not imagining it. The explanation is simply not pH.
You are drinking less coffee. A tenth less of everything: acid, caffeine, bitter compounds. Ten percent is not much, but it is not nothing.
The powder changes the texture. Mushroom powders contribute soluble and insoluble polysaccharides that add body. A rounder mouthfeel reads as "smoother" long before chemistry gets involved.
Most blends are roasted darker. Darker roasts have less perceived brightness, and many mushroom coffees choose them deliberately to keep earthy notes in balance. That is a roasting decision, available in any coffee, sold here as a mushroom benefit.
Expectation does real work. A drink positioned as gentle is tasted as gentle. This is one of the most reliable findings in sensory science, and no wellness category is exempt from it.

One more compositional footnote, since this is an article about acids. Chaga contains oxalic acid, which is, unavoidably, an acid. It is present in small amounts at a 5 percent inclusion, but it is a reminder that adding fungi to coffee does not automatically subtract acidity. What Actually Moves Acidity in Your Cup
If lower acidity is the goal, the effective levers are all on the coffee side and all free.

Cold brew deserves the caveat it rarely gets. That 2018 study found cold brew's pH was no different in any meaningful way, but its titratable acid load was genuinely lower. Brew ratio matters too. The Specialty Coffee Association's brewing standards put the working band at 50 to 60 grams of coffee per liter of water. Brew stronger than that and you concentrate everything, acids included.
The Stomach Question, Answered Honestly
Most people who search this are not curious about chemistry. They are asking because coffee sometimes does not sit well, and they want to know whether the mushroom version will be kinder.
We are not going to answer that one, and we want to be direct about why.
The pH of a beverage in a cup is not the same thing as how that beverage behaves in a human stomach, which maintains its own acidity far stronger than any coffee.
