Turkish, or cezve, brewing works by heating finely ground coffee directly in water in a small long-handled pot until foam rises, then pouring the whole thing, grounds and all, into a small cup. The study's "boiled, no filter" method is the closest real analog to Turkish brewing in this table: grounds heated directly in water with nothing strained out before drinking. It measured roughly 11 times higher cafestol than French press and about 82 times higher than paper filtered drip. Turkish coffee was not the specific brew tested, cezve technique keeps the pot just under a full boil rather than a hard rolling boil, so we are not going to claim the exact number 939.2 mg/L for a cup of Turkish mushroom coffee. What we can say is that the two methods share the defining trait the study measured against, no filtration step of any kind, and that trait is what drove the number that high.

How to Brew Turkish Mushroom Coffee

Grind extra fine, under 100 microns, closer to flour than to sand. A standard drip or French press grind will not settle properly and will taste harsh. Most home grinders bottom out too coarse for this; a dedicated Turkish burr grinder or two passes on an espresso grinder's finest setting gets you there.

One heaping teaspoon of ground mushroom coffee per small cup of cold water, roughly 60 to 70 ml, the traditional Turkish serving size rather than a full American mug. Add sugar to the water first if you want it, not after brewing.

Heat in a cezve over low to medium heat, uncovered, without stirring once it is on the burner. Watch for foam rising as the coffee approaches a boil.

Pull it off the heat right as the foam crests, before it boils over. Spoon a little foam into each cup, then return the pot to the heat briefly and pour the rest once foam rises again. This two stage pour is what builds the crema Turkish coffee is known for.

Let it sit for a minute or two before drinking, so the grounds settle toward the bottom of the cup. Drink slowly and stop before the last sediment-heavy sip, or embrace it. Both are traditional.

Turkish brewing typically runs stronger than that, closer to a double or triple ratio, which is part of why it is served in a 2 to 3 ounce cup rather than an 8 ounce one.
